bottlinghiseffortsandin 2016 madehisfirst
saletoBowral’snowshutteredBiotarestaurant,
wherehisuniqueblendsandold-schoolapproach
tookthenaturalwineworldbystorm.
StyleUsingtraditionaltechniqueslearntfrom
hisGreekfather,Zafirakostakesa hands-on
approach,quiteliterally.Fromharvestingto
bottling,everythingis donebyhand,with
noelectricityorpumpsusedthroughoutthe
process.Unfined,unfilteredandfreefrom
additivessuchassulphur,Zafirakos
placesemphasisonthefruit,which
is sourcedfromorganicproducers
whereverpossible.
