Lamb skewers with harissa hummus


SERVES 4


1 tbspbrownsugar
2 tbsppomegranatemolasses
600 gmlambloinfillets
60 ml(1/4cup)extra-virgin
oliveoil
2 mediumredcapsicums,
quarteredandseeded
1 smallredonion,
thinlysliced
2 tbsplemonjuice
1 cupflat-leafparsley leaves
½ cupmintleaves
300 gmhummus
2 tbspharissapaste,
or to taste


1 Preheata chargrillpan
orbarbecueonhighheat.
2 Combinesugar,molasses
and2 tbspwaterina medium
bowl.Addlambandstirtocoat;
seasontotaste.Threadlamb
onto 12 metalskewers(seenote),
and brush lamb with half the oil.


3 Cookskewersuntiljust
cookedthrough(4minutes)
Removefromheat,cover
andrestfor5 minutes.
4 Meanwhile,cookcapsicum
onchargrillpanorbarbecue
untiltenderandcharred
(4minutes).(Youcanplace
a heavypanonthecapsicums
tokeepthemflatonthegrill.)
5 Combineonionwithhalf
thelemonjuiceina bowl.Add
remainingoilandherbs;season
totaste.Tosssaladtocombine.
Combinehummus,harissa
andremaininglemonjuice
ina bowl;seasontotaste.
6 Serveskewerswithsalad,
capsicumandharissahummus.
NoteIf usingbambooskewers,
soaktheminboilingwaterfor
15 minutesbeforeusetoprevent
