Your mum is a chef as well – what are some thingsyoulearned
from her? Definitely having respect for each ingredient.I usedto
go to the markets with my mum all the time. I rememberclearly
that she would utilise each and every part of an ingredient,and
she taught me how to take advantage of this. Andthiswhy
I have a “no waste” mentality in my kitchen.

What’s your favourite dish on the menu right now?OurMayura
wagyu brisket with pearl onion and nashi pear. I wasinspiredby
galbi, a classic Korean dish normally served duringcelebrations.

I like to share a bit of my background with them.

When you’re hosting a dinner party at home, whatdoyou
usually like to cook? Korean barbecue. It’s a greatopportunity
to chat with my guests outside of the kitchen.

What do you love about living in Adelaide? I’ve livedin Adelaide
for more than 10 years, and it’s a very calm and serenecity.I feel
a lot more relaxed when I’m here. I also have threegirlsanda
loving wife. I couldn’t think of any better place to raisemyfamily.

Now that Adelaide is reopening to Australian tourists,whatdo
you recommend they do while they are there? AtMountLofty
House we’re surrounded by a lot of great wineriesandbeautiful
scenery. I would recommend going for wine toursaroundthe
Barossa Valley, McLaren Vale and the Adelaide Hills.
