250 gmstrawberries,hulled
200 gmcastersugar
100 mlvodka
750 mlwhitewine,suchasriesling
Juiceof2 lemons,plus1 lemon
sliced,toserve
Tarragonsprigs and soda water,
to serve


1 Tomakestrawberrycordial,heat
500ml(2cups)waterina saucepan
overmediumheatuntilalmostboiling.
Pouroverdriedchamomileflowersin
a bowlorteapotandsetasidetoinfuse
(10minutes),thenstrainanddiscard
flowers.Ina blenderorfoodprocessor,
blend3 strawberrieswithchamomile
infusionuntilsmooth.Strainthrough
a sieveintoa bowl,thenadd sugar
andstiruntildissolved.
2 Combinevodka,wine,lemonjuice
andstrawberrycordialina 2-litreserving
jug.Thinlysliceremainingstrawberries
thenaddtojugwithlemonslicesand
tarragonsprigs.Addiceandstirgently.
Servewitha splashofsoda water and

700 mlCampari
Sodawaterand orange slices,

1 Preheatovento180°C.Placepeach
halvesona largeoventraycutsides
upandroastuntilstartingtocaramelise
(35minutes).Setasidetocoolslightly.
2 Reserve6 smalllemonthymesprigs
toserve.Combineremainingthyme,
Campariandroastedpeachesina jug.
Coverandsetasideatroomtemperature
toinfuse(8hoursorovernight).Strain
througha finesieveintoa largebowl
andreservepeaches(seenote).
3 Meanwhile,place6 highballorrocks
glassesinfridgetochill.Whenreadyto
serve,pour60mlpeach-infusedCampari
intoeachglassandfillwithice.Topwith
soda,stirgently,andgarnishwithorange
slicesandreservedlemonthymesprigs.
