a bowlandsprinklewith1 tspfinesalt.
Coverandrefrigerate(1 hour).Rinse
undercoolwater,drainwellandplace
ina 250mljar.Meanwhile,combine
remainingpicklingingredientswith
125ml(½cup)waterina saucepan
overmediumheat,stirringtodissolve
sugar.Bringtotheboilthenpourmixture
overonion,sealjarandcooltoroom
temperature.Pickledonioncanbe
storedinthefridgefor2 weeks.
2 Trimtunasteakstothesamesize
andshapeasthebread.Placetunain
a shallowdish,addtsuyuandmarinate,
turningoccasionally,inthefridge(1 hour).
3 Forlemonmayonnaise,whiskegg
yolks,mustardandlemonjuicewith
a pinchofsaltina mediumbowl.Slowly
drizzleinoil,whiskingconstantly,until
mixturebeginstothicken.Addlemon
rindandseasonwithsalttotaste.
4 Blanchsamphireina saucepanof
boilingsaltedwater(20seconds).Refresh
inicedwateranddrainwell.Add1 tsp
finelychoppedsamphiretolemon
mayonnaise and mix to combine.

5 Whiskegg,eggyolk,milkandmustard
in a bowl.Placeflourandbreadcrumbsin
separatebowls.Draintunaandpatdry
withpapertowel.Dusttunainflour,
shakingoffexcess,dipintoeggmixture,
andthenpressevenlyintobreadcrumbs
tocoat.Placetunaona trayand
refrigerateuntilreadytocook.
6 Heatoilina deepheavy-basedfrying
panovermediumheat.Frytunauntil
crispandgolden(30-40seconds),then
turnandcookothersideuntilgolden
andtunais cookedmedium-rare
(30-40seconds).Drainonpapertowel
andsprinklewithseasaltflakes.
7 Butterbread.Top2 sliceswitha tuna
steak,a spoonfuloflemonmayonnaise,
somepickledonionandsamphire.
Sandwichwithremainingbread,
pressinglightly,thenhalveandserve.
