60 ml(¼cup)lemonjuice
Baby shiso, to serve


1 Placesugar,glucoseand150mlwater
ina smallsaucepanovermediumheat
andbringtotheboil.Reduceheatand
simmerfor1 minute,thenremovefrom
heatandaddbasilandshiso.Setaside
tocool,thenrefrigeratetochill(2hours).
2 Blendpeachesina blenderwith60ml
(¼cup)wateruntilsmooth.Addsugar
syrupmixtureandlemonjuice,andpulse
tocombine.Strainthrougha finesieve,
