when her mother could make a feast out of
seemingly nothing—and whip up delightfully
tempting cakes for dessert after Sunday dinner.
When Mary was young, if you asked for
a recipe, you cherished it. Just as farming
knowledge was carefully passed down among
small family-run farms, recipes came from
someone you knew and often included a story.
Mary’s mom would handwrite recipes for
friends on any piece of paper she could fi nd—
even a card cut from the back of a cereal box.

LEGENDARY


COFFEE CAKE


Th is soft and delightful cake
has a beautiful golden color and
rich buttery fl avors—with a
touch of coff ee.

INGREDIENTS


For The Cake:
2 cups self-rising flour
1¼ cups superfine sugar
1 cup softened Kerrygold
Unsalted Butter
4 farm fresh eggs
1 tablespoon coffee essence
Walnuts to decorate

For The Icing:
2 cups powdered sugar
½ cup Kerrygold Unsalted Butter
Dash of coffee essence

HOW TO MAKE IT
1.Preheat the oven to 325 degrees.
Grease a 9 x 11-inch baking dish, line
with parchment paper, and set aside.


  1. Place softened butter, fl our,
    superfi ne sugar, and coffee essence
    in a bowl. Crack in eggs and then
    beat everything together until smooth
    and well-blended.

  2. Spread mixture into prepared
    baking dish, leveling it smooth with
    the back of a spoon.

  3. Bake for 25-30 minutes until
    cooked through and golden. Remove
    cake from baking dish and leave to
    cool completely on a wire rack.

  4. For the icing, mix butter, powdered
    sugar, and coffee essence together
    in a bowl until smooth and well-
    blended.

  5. Spread the icing evenly over the
    top of the cake. Arrange walnut
    pieces all over the top. Cut into
    wedges and serve.

Th ese handwritten recipes have become
tangible memories for Mary, their smells
taking her back to being a little girl, watching
her mom in the kitchen. Now that she is a
grandma herself, after years of running a dairy
farm with her husband, she has decided to
continue the tradition for her daughters and
grandchildren. She is writing down recipes,
such as her legendary coff ee cake, so that one
day her granddaughter will not only enjoy
a deliciously buttery cake made from real
ingredients—but the memory of baking it
with her grandma.
