Serves 4–6
1 big bag of sturdy saltedcrisps(such
as Tyrrells or KettleChips)
200ml crème fraîche
Juice of ½ lemon ora littlemore
100g caviar or herringroe
½ red onion, very finelychopped
Mix the crème fraîcheandlemonjuice.
Choose the largest crispsandspoon
a dollop of the mix ontoeach.Top
with a small spoonfulof caviarand
red onion. Arrange crispsona platter
and serve immediately.»
