Serves 2 Ready in 30 mins``````Q 250g cauliflowerQ 1 large eggQ ½tsp fresh oregano, choppedQ 1tsp grated ParmesanQ Frylight cooking sprayQ 1-2tbsp tomato puréeQ 25g mozzarellaQ 1tbsp sweetcornCauliflowermargherita pizzaQ Quarter of a red pepper,cut into thin stripsQ A handful of rocket1. Heat the oven to 200°C, Gas 6. Blitz thecauliflower in a processor and tip into amicrowave-safe bowl. Cook on high for 5-6minutes, until softened. Squeeze out excesswater in a clean tea towel, then mix with theegg, oregano and Parmesan, and season.    2. Spread the cauliflower mix on to    a baking tray lined with non-stick    baking paper, to a circle that is roughly    23cm wide. Spray with the Frylight and    cook for 10 minutes.    3. Mix the tomato purée with a little hot    water and spread on to the cauliflower    base. Top with the mozzarella, sweetcorn    and red pepper, and cook for a further    10 mins.
