1. Use a spiraliser or julienne-stylepeeler to cut the carrot, broccoli stemand courgette into separate piles ofnoodle-like strands.2. Heat the sesame oil in a wok and stir-frythe prawns for about 2 minutes, until theyare pink and cooked through. Remove witha slotted spoon and set them aside. Returnthe pan to the heat and stir-fry the carrotand broccoli ânoodlesâ with the gingerfor 2-3 minutes until beginning tosoften. Add the courgette noodlesand stir-fry for a further 2-3 minutesbefore returning the prawns to the panto reheat. Drizzle over the soy sauce andthen toss to coat.
