Keep It Fresh
Fenugreek leaves can be frozen or dried. Dried leaves
offer more robust flavor than fresh, so store according
to your flavor preference (see freezing and drying directions on pages 19-20).
In the Kitchen
Dishes: salads, stews, curries, breads,
sauces, rice, chutneys
Prep: Chop fresh leaves and add to any
savory dish.
Serve: Fresh leaves are delicious in veg-
gie and meaty curries, rice, sautés, and
stews, especially with potatoes and spin-
ach. They’re often baked into savory
Indian breads, like naan, paratha, and
chapati. Use the leaves toward the end
of cooking. Use just a pinch of dried
leaves for robust flavor in sauces and
cooked dishes, along with onion, ginger,
and garlic.
