Care: Nepitella self-seeds readily; pull up new seedlings
when they appear to control spreading.
Keep It Fresh
Nepitella dries well for use over the winter (see direc-
tions on page 20).
In the Kitchen
Dishes: Sautés, roasts, soups, stews, teas
Prep: Use leaves whole or chopped.
Serve: Nepitella is traditionally sau-
téed with mushrooms, zucchini, and
tomatoes in Tuscan cuisine. It’s also
a delicious companion for artichokes
and goes particularly well in garlic and
tomato sauces. Try it with porcini mush-
rooms, garlic, olive oil, and pecorino or
Parmesan cheese. Stir it into soft, spread-
able cheeses like goat cheese or cream
cheese, and use it to season shellfish like
scallops and shrimp.
