ExOTIC SPICES

Plant: Seeds, cuttings, or grafted trees
Water: Occasionally; somewhat drought tolerant
Harvest: The tree flowers in spring, and its fruits ripen
in summer.

In the Kitchen
Dishes: Baked sweets, breads, puddings, cheeses
Prep: Grind whole kernels in a mortar and pestle, spice grinder, or coffee grinder just
before using.
Serve: With its range of nutty-sweet flavors, mahlab is a perfect match for any sweet
dessert, especially when baked into cookies, cakes, breads, and other pastries. It’s
also suited for dairy-based treats like
pudding, cheesecake, crème brûlée, and
ice cream. Dried fruit, honey, nuts, and
cinnamon are natural complements. Use
mahlab sparingly, as it can be bitter: 1
teaspoon per cup of sugar.
