Plant: Cuttings
Water: Regularly and thoroughly, to keep the soil and
deep roots consistently moist but not soaking; at least
two waterings per week in hot summers
Harvest: Rose petals are ready for harvest when just
freshly opened. If growing for the hips, let the flowers
die away so the hips can develop. Harvest hips when
they are bright red or orange and become soft and slightly wrinkled. Wait until after
the first frost in fall for the best flavor.
Care: Prune in springtime. If growing for the petals, snip dead flowers regularly to
promote new growth. To prepare for a cold winter season, stop pruning in the fall.

Keep It Fresh
Don’t wash fresh-picked rose petals, as
the water will cause them to brown. To
dry petals and hips, spread them over a
flat surface and dry in a shady spot with
good air circulation; you can also use an
oven or dehydrator.
To remove the prickly hairs inside
the rose hips, grind them coarsely in a
food processor and pour through a sieve
to filter out the hairs. Store dried petals
and hips in a cool, dark, dry location.

In the Kitchen
Dishes: baked sweets, preserves, syr-
ups, ice cream, sorbet, pudding, mari-
nades, sauces, teas
Prep: Petals and hips can be used fresh,
dried, whole, or ground in any dish. Infuse
petals in boiling water to make rose water.
Serve: Store rose petals in a sugar container to make a delicious rose sugar for bak-
ing. Or infuse them into cream or milk for use in custards, puddings, and ice cream.
Rose-infused honey is a delicious addition to teas, jams, and fruity desserts. Candied
petals make beautiful edible cake decorations, while crushed petals can be sprinkled
over yogurt, salads, and soups. Add ground petals to savory spice blends.
