ExOTIC HERBS

Plant: Seeds, cuttings, or divisions. Seeds need to be
stratified in the fridge before planting outside (see
page 14).
Water: Moderately
Harvest: Pick or snip leaves and flowers when they’re
established. To harvest seeds, snip flower heads into
paper bags, taking care not to drop any.
Care: Prune and snip dead flowers to encourage new growth. Self-seeds easily;
collect seeds as you see them and plant where you like to control the growth of
new plants.

Keep It Fresh
Anise hyssop will stay fresh for up to five
days in the fridge or longer in a vase or
jar of water. Freeze for longer storage or
dry if using for tea leaves (see directions
on page 19–21). Alternatively, anise
hyssop is a fantastic herb to preserve in
honey, jam, or fruit syrup.

In the Kitchen
Dishes: Teas, cold beverages, baked
desserts, marinades, sauces
Prep: Chop leaves and flowers, or use
them whole.
Serve: Add to veggie salads, fruit salads,
and marinades for fish, chicken, or pork.
For baking, mince flowers and add to
sugar or dough to make cakes, muffins,
cookies, and other pastries.
