INGREDIENTS
2 cups diced cooked chicken
¼ cup chopped red onion
½ green bell pepper, chopped
1 small tomato, chopped
½ avocado, sliced
2 tablespoons extra-virgin olive oil
2 tablespoons cider vinegar
2 packets of stevia or ½ teaspoon agave
2 tablespoons salsa
½ teaspoon cumin
1 clove garlic, chopped
1 head romaine lettuce
1 cup shredded Monterey Jack cheese
DIRECTIONS
- Place the chicken, onion, pepper, tomato, and avocado in a large bowl.
- Whisk together the olive oil, vinegar, stevia or agave, salsa, cumin, and
garlic. - Place lettuce on the serving plates, and pour the olive oil mixture over it.
- Place the chicken mixture on top.
