1   pound   fresh   strawberries,   washed  with    the stems   removed
1 small orange, peeled
1 teaspoon vanilla extract
¼ cup agave
2 teaspoons cinnamon

DIRECTIONS



  1. Blend all the ingredients in a blender.

  2. Strain the mixture through a mesh sieve to remove the strawberry seeds.

  3. Place the strawberry mixture in a glass container in the freezer for 2 to 3
    hours before serving.


Brown Rice Pudding


SERVINGS: 6 to 8
PREPARATION TIME: 4 hours


INGREDIENTS


1½  cups    cream   or  heavy   cream
½ cup brown rice
¼ teaspoon salt
3 egg yolks
3 teaspoons agave
½ teaspoon ground cinnamon
1 tablespoon unsalted butter
2 teaspoons vanilla extract

DIRECTIONS



  1. Combine the cream, rice, 1½ cups water, and salt in a saucepan. Bring
    the mixture to a boil over medium-low heat.

  2. Reduce the heat. Cover and simmer 1½ hours until the rice is tender and
    the liquid is absorbed.

  3. Mix the egg yolks, agave, and cinnamon in a bowl. Pour the egg mixture
    into the rice pan on the stove, stirring constantly for 6 minutes, or until
    the pudding is thickened.

  4. Remove from the heat. Add the butter and vanilla, and stir. Leave in the
    pan, and let cool to room temperature. Refrigerate for at least 2 hours
