1 pound fresh strawberries, washed with the stems removed
1 small orange, peeled
1 teaspoon vanilla extract
¼ cup agave
2 teaspoons cinnamon
DIRECTIONS
- Blend all the ingredients in a blender.
- Strain the mixture through a mesh sieve to remove the strawberry seeds.
- Place the strawberry mixture in a glass container in the freezer for 2 to 3
hours before serving.
Brown Rice Pudding
SERVINGS: 6 to 8
PREPARATION TIME: 4 hours
INGREDIENTS
1½ cups cream or heavy cream
½ cup brown rice
¼ teaspoon salt
3 egg yolks
3 teaspoons agave
½ teaspoon ground cinnamon
1 tablespoon unsalted butter
2 teaspoons vanilla extract
DIRECTIONS
- Combine the cream, rice, 1½ cups water, and salt in a saucepan. Bring
the mixture to a boil over medium-low heat. - Reduce the heat. Cover and simmer 1½ hours until the rice is tender and
the liquid is absorbed. - Mix the egg yolks, agave, and cinnamon in a bowl. Pour the egg mixture
into the rice pan on the stove, stirring constantly for 6 minutes, or until
the pudding is thickened. - Remove from the heat. Add the butter and vanilla, and stir. Leave in the
pan, and let cool to room temperature. Refrigerate for at least 2 hours
