Should we wait for the “scientific consensus” to rethink
our consumption of something mired in profit—something
for which there is not only no human need, but which data
indicates is almost certainly causing us harm? Keep your
answer in mind as we venture into one of the great cons of
our time in the next chapter.
FIELD NOTES
Sugar-protein bonding (glycation) can occur to any
protein in the presence of sugar. All carbohydrates,
with the exception of fiber, have the potential to
glycate.
While end-products of glycation, AGEs, may be
consumed in food, the vast majority are formed in
your body as a result of chronic carbohydrate
consumption.
Isolated fructose creates stress on the liver, which
promotes inflammation and insulin resistance.
Sugar interacts with genes in the brain, reducing
neuroplasticity and impairing cognitive function.
Certain foods are created to be hyper-palatable,
leading to insatiable hunger and overconsumption.
These foods are essentially bear traps of inflammation
and obesity, and are best avoided completely.
Industry does not care about your health; don’t wait
for “scientific consensus” before banishing
