Reducing     frequent,   prolonged   insulin     spikes  by
minimizing   concentrated    carbohydrate    consumption
is  one of  the top ways    of  preserving  and enhancing
insulin sensitivity,    thus    minimizing  inflammation    and
fat storage.
Insulin  is  a   one-way     valve   on  your    fat     cells,
preventing   the     release     of  stored  calories    for     fuel.
Many     organs  enjoy   using   fat     for     fuel,   including   the
brain    (once   the     fat     is  converted   to  something   called
ketones).
Forty   percent of  Alzheimer’s cases   may be  owed    to
chronically  elevated    insulin,    which   may     begin
impairing    cognitive   function    decades     prior   to  a
diagnosis.
Grains, including   wheat,  are dramatic    blood   sugar   and
insulin boosters,   relatively  low in  micronutrients, and
the  top     source  of  calories    consumed    in  the     United
States. There   is  no  human   biological  requirement for
grains.
Carbohydrates,   albeit  important,  are     but     one     part    of
the  story—stress,   rancid  oil     consumption,    and     even
toxic    industrial  chemicals   can     all     contribute  to
