HOT BUTTERED PEAS
SERVES 4
1 pound (about 3 cups) frozen peas
2 tablespoons unsalted butter
1 teaspoon grated lemon zest (from 1 lemon)
1 teaspoon fresh lemon juice
Kosher salt and freshly ground black pepper
Place the peas in a colander and run under hot water until
thawed and warmed, about 4 minutes; drain well.
- Melt the butter in a large saucepan over medium-high
heat. Add the peas and toss to coat. Cook, stirring, until
heated through, about 2 minutes. Stir in the lemon zest
and juice. Season with salt and pepper to taste and serve.
