The harmful kind    of  saturated   fat comes
from eating too many refined
carbohydrates.

Decades ago, research correlated saturated
fat levels—particularly palmitic acid levels—
with cardiovascular disease. (The more
saturated fat people had in their bodies, the
more likely they were to have a heart attack.)


As a result of that research, we were all
told not to eat saturated fat because it would
lead to heart attack or stroke. We were
particularly warned against red meat and eggs,
as they happen to be higher in saturated fat
than other foods are. The premise was simple:
Meat and eggs have lots of saturated fat.
Saturated fat is associated with heart disease.
Therefore, avoid meat and eggs.


But those recommendations were based on
faulty logic.
