Many of the recipes in this book also use Parmesan cheese. I
call for either grated or powdered Parmesan. Powdered
Parmesan is simply Parmesan cheese that has been grated to
the point of being light, fluffy, and powdery. Fresh
pregrated Parmesan cheese available at supermarket cheese
counters usually has a powdery texture and can be a
convenient option in recipes that call for powdered
Parmesan. To make powdered Parmesan at home, place
grated Parmesan in a food processor or spice grinder and
pulse until it is fluffy and powdery.
MCT OIL
MCT stands for medium-chain triglycerides, which are
chains of fatty acids. MCTs are found naturally in coconut
oil, palm oil, and dairy, and they’re particularly helpful on a
keto diet because the body uses them quickly and any
MCTs not immediately utilized are converted to ketones.
MCT oil is extracted from coconut or palm oil and contains
higher, concentrated levels of MCTs, so it’s great for adding
ketones to your diet. Whenever MCT oil appears in a recipe
