Hellen uses lamb bacon on his BLT, but seeing as it’s unlikely
that you’ll find lamb bacon, regular bacon works very well.
When I tried this the first time, my mayonnaise broke toward
the end. You’ll know you have a broken mayo when the liquids
and solids aren’t homogeneous. Even though there are ways to
try to fix it, your best bet is to start again. If the oil is separated
at any point, make sure to whisk it vigorously into the yolk.
That’s the best way to recover.
