You can substitute a white cheddar, though Montasio is ideal.
Heating a traditional nonstick pan without oil can release
carcinogens, so research the pan before doing so. A better bet is
to use a well-seasoned cast-iron pan. (If it’s not well seasoned,
add a splash of oil.)
You can skip this step, if it makes you nervous. Just eat the
frico with one side crusty and the other side melted.
