First, make the dressing. In a measuring cup, measure out the
white wine vinegar, add the shallots, and then whisk in ½ cup of
the oil in a steady stream until it emulsifies. Adjust with salt,
pepper, and up to ¼ cup more oil, tasting as you go. (Use a lettuce
leaf to taste it.)
Place the lettuce, hearts of palm, mango, and macadamia nuts in
a large salad bowl. Drizzle on some dressing, tossing as you do and
tasting to see how much dressing it needs. Stop when everything is
lightly coated.


Add Dieterle’s holy trinity and taste again. Adjust for salt and
pepper and serve.


* The best way to wash the lettuce is to submerge it in a bowl full
of cold water and swish it, changing the water several times until
no dirt is on the bottom.
