3 tablespoons sriracha hot sauce (see Resources)
2 tablespoons Korean crushed red pepper (see Resources)
2 tablespoons toasted sesame seeds (also called geh; see
Resources)
2-inch piece of fresh ginger, peeled and coarsely chopped
1 dried Anaheim chili, stemmed and coarsely chopped
(optional)
1 serrano chili, stemmed and coarsely chopped (optional)
4 teaspoons kosher salt
4 teaspoons Korean chili paste (see Resources; optional)
1 teaspoon freshly ground black pepper


Add all of the ingredients to a blender.


Blend for about 1 minute, until you have a smooth puree. Taste
to adjust for citrus, heat, and salt. Use immediately or refrigerate in
a jar for later use. The sauce will last about a week in the
refrigerator.


* You can substitute a different brand of chili sauce and it’ll work,
but it won’t be exactly the same, obviously, as Choi’s. Mae
