Sugar (optional)
In a medium bowl, marinate the fish in the lime juice for 45
minutes.
Strain the fish and toss in a bowl with all of the other
ingredients to taste. If it’s too acidic, add a pinch of sugar. Serve
by itself or with tortilla chips for scooping.
* Other firm white fish, such as tilapia, work well here too.
* Some limes are juicier than others; don’t worry if you don’t get
the full amount of juice. Take what you have, pour it over the
fish, and stir it every 10 minutes or so.
* Valencia uses heirloom tomatoes that he buys at the farmer’s
market.
