If you’re not going to use them right away, either cover with a
damp towel or, for much later use, freeze right on the cookie
sheet and then store the individual tortellini in a freezer bag.
Whatever ragù you don’t use, you can freeze. When ready to
use, defrost it in the refrigerator overnight and warm it up in a
pot with a little water.
