Tasso is a Southern cured pork product, similar to pancetta but
coated in a Creole seasoning.
The same rule applies to these peppers as to the garlic: you can
make them by using the pickle formula. Or substitute Brandon
Pettit’s pickled peppers.
This is called potlikker (or pot liquor) and it’s a Southern
delicacy. Hopkins suggests sopping it up with corn bread.
