If you don’t want to buy a bamboo steamer, you can cook this
dish in a traditional steamer set over a pot (as long as it fits the
clay pot). If you can’t get the pot’s lid on, you can tent
everything tightly with foil.
Cut into a few pieces of chicken just to make sure; all of the
chicken should look opaque. If it’s pink or translucent, keep
cooking.
