La provincia de Cotopaxi tiene como celoso vigilante al volcán del
mismo nombre. Cerca de su cima nevada hay una gran mancha
negra que es una pared de piedra, tan lisa que impide que la
nieve se adhiera a ella y se la conoce como Yanasacha. Su capital
Latacunga o “Ciudad de los Puentes” ha sufrido embates de la
naturaleza que provocaron su destrucción. Sin embargo, su gente
generosa y amable se negó a abandonarla y la reconstruyeron
guardando líneas de arquitectura colonial e hispanas.Su principal celebración folklórica es la Mama Negra que
rememora la gran impresión que causó en los aborígenes la
importación de negros para trabajar como esclavos. En esta
celebración hay un derroche de tradiciones y alegría. Además,
puede aprovechar su visita para saborear el plato típico de la
ciudad: las famosas “chugchucaras” preparadas con mote, fritada,
cuero de chancho, papas, empanadas, plátano maduro, choclos y
canguil y acompañarlas de una bebida de chicha o cerveza. Otras
delicias son las “allullas” con queso de hoja.The province of Cotopaxi has a jealous guardian, a volcano that goes
by the same name as the province, atop and close to the summit
thereís a black spot, a big black wall, so smooth that it doesnít allow
the snow to stick to it, it is known as Yanasacha. The capital city
Latacunga or city of the bridges has been through natural disasters
that have provoked its destruction, however the warm, generous
people refused to leave the city and so they rebuilt it trying to keep the
colonial and Hispanic type of architecture.The main celebration is the Mama Negra (Black Mamma) this is the
feeling the aborigines got when they saw blacks working as slaves. In
this celebration there is a great and generous deal of traditions and
happiness. You can also make the most of your visit by sampling the
cityís typical dish the ever famous “Chugchucaras” prepared with
hominy, fried pork, pork skin, potatoes, turn overs, fried plantain, corn
and pop corn, and enjoy this with a beer or a glass of chicha (a drink).
Other delicacies are the “allullas” with Queso de hoja (delicious cheese
wrapped in a leaf )
