18.1.2.1.3 Amines


A number of aliphatic and aromatic amines


are found in various fruits and vegetables (Ta-


bles 18.6 and 18.7 and 18.1.4.2.1). They are
formed in part by amino acid decarboxylation
such as in apples, or by amination (cf. Re-
action 18.1) or transamination of aldehydes
(cf. Reaction 18.2).
