documentaries
following medical
professionals, this is
one of the best. The
stakes are so high, the
expertise so acute and
the personalities so
reassuring that it offers
more or less the perfect
balance of dramatic
macaroni cheese,
Marmite (apologies,
“yeast extract”) in
roux, French toast
made with custard
powder, and a useful
primer in the different
functions of whole and
powdered spices in
curry. “Comfort is
saying I want a little bit
of everything,” Nadiya
says. Over the course of
the hour that’s more or
less what you get.
Flavours is aimed at
those who have found
that the past 18 months
have sapped their
enthusiasm for home
cooking. A little more
experimental and
delivered with
irrepressible good
humour and
showmanship, these are
recipes all the more
appealing for their
cheats: Wotsits (sorry,
“cheese puffs”) topping
growing and cooking
your own, whether it’s
vegetables, fruit or
herbs: expect aubergine
caponata, chicken stew
and a veg-based
“sunshine cake”, plus
trips to a Welsh
allotment and a
Staffordshire cottage
garden, with the
message that anyone
