Father-and-son farmers Mark and James
Leatham produce rare-breed meat from
their farm in Hilfield. The beef, popular

The lamb is hung for seven days, giving

This organic salt-marsh lamb is
a favourite of Raymond Blanc and
Marcus Wareing. Produced on a coastal
farm near Caernarfon, the lambs are
reared on salt marshes and graze on

which gives the meat a unique taste.

around the cherry orchard at this
farm near Marlow. They eat an oat-rich

a farm near Crediton that prizes
sustainability and welfare. The skin goes
fantastically crispy and the meat is rich
