1 cup primarysoup
1 pieceofgingerroot

(a) Soakthebird-nestincold waterfor^1
hour. Shake off any feathers, etc. Wash
gentlyandboilfor1%hourswiththeginger.
(&) Pickthe pigeons. Chop oflF thehead,
feetandwings. Cutoneline 3 incheslongand
takeoutthe interior. Washthepigeonsand
rub insideandoutwithsalt. Placeinabowl
withthecutsideontop.
(c) Fillthepigeons withthebird-nestand
primary soup. Steam for 2i/^ hours in a
double-boiler.
(d) Nowtransferintoalargerbowlbyput-
tingthetwobowlsmouthtomouth.
