likespinach. Thebest qualityispure white.
The other qualityis a littlebrown and con-
tains some impurities of straw and feathers,
whichmust beremoved by shakinginwater.
(a) Soakincoldwaterforonehour 2 cups
ofbird-nest. Thenwashgently.
(&) Cookinwaterfor^1 hour,withapiece
ofginger.
(c) Strainoffandputinto^6 pintsofpri-
marysoup. LetsimmerforI/2hour.
