2 cupsonionscutintodice
2 cupswaterchestnutscutinto dice
1%cupscelerycutintodice
1 poundofchickenwithoutbones

(a) Removetheskinsfromthewalnutsby
placingtheminboilingwater. Thenfrythem
inboilingoiluntiltheyturnyellow.
(&) Put thesecondaryvegetables inahot
cooking-pancontainingoilandfryfor 2 or 3
minutes. Keep them moving so that each
particle receives the same amount of heat.
Add enoughprimary soup tocover and boil
for 15 minutes.
(c) Putthechickeninahot,oiledpanand
fryfor 2 minutes.
(d) Addthe vegetables.
(e) Add Chinesegravy and remove from
thestove.
Placeonadishandgarnish withthe fried
walnuts.
