20 pairs ofduck feet
2 cupschoppedbambooshoots
2 cupsmushrooms. Cutthelargerones
2 cupswaterchestnuts cutintothinpieces

(a) Washthoroughly 20 pairsofduckfeet
and plunge them into boiling water for 3
minutes. Take off the skin. Take out all
boneswithout spoiling theshape ofthe feet.
Cuteachfootinto 2 pieces.
(b) Cut into small pieces the bamboo
shoots, mushrooms, and water chestnuts.
(c) Havea hotstove. Oil thefrying-pan
andfrythefeetfor 5 minutes. Addsaltand
thebambooshoots,chestnutsandmushrooms.
Continue to fry for 5 minutes after having
mixedwell.
