1 duck
2 poundsflour
1/2cuplard
1 tablespoonfulsalt
4 tablespoonfuls baking powder

(a) Roast the duck, take out the bones,
andcutthemeatinto smallpieces.
(&) Sift*theflour and putinto a suitable
bowl. Mix the flourwith enoughcoldwater
tomakeathindough.
(c) Roll the dough out flat and cut into
thesizeofbiscuits.
(d) Nowrollthebiscuitsflatandfillthem
with the duck meat, wrapping the dough
aroundthemeatintoaperfectball. Closeit
upcarefully. Theamountofduckshouldbe
one-half the amount ofdough.
(e) Placeinadouble-boilerfor^10 minutes


before putting over the fire. Steam for %

ofanhour.
