Pineapple-Ginger Pudding


Pineapples are the highest source of bromelain, an enzyme that breaks down protein. They are so high in these enzymes that they can be used


as a digestive stimulant that helps ease gastric issues and aids digestion.


SERVES 2 TO 4

10 dates, seeded
¾ cup filtered water
¾-inch piece fresh ginger
4 cups chopped, peeled pineapple
1 cup freshly squeezed lemon juice
Grated zest of 1 lemon
Coarsely ground almonds, for garnish

Place the dates in a small bowl, cover with the water, and soak for about 1 hour, or until soft. Drain, reserving the liquid. Finely grate the ginger with
a ginger grater or fine grater to extract its juice (you should have 1½ teaspoons). Place the dates, pineapple, lemon juice and zest, and ginger juice
in a blender and blend slowly, adding the reserved liquid as needed until the mixture is smooth yet thick. Pour the pudding into a decorative bowl,
sprinkle the almonds over the top, and serve.
