Peach-Melon Soup


I had always been told that melons should either be eaten alone or left alone. In making melon soups, I’ve found that melons actually combine


quite well with other foods—providing great taste and ease of digestion. (Pictured here)


SERVES 2

1 large cantaloupe, halved and seeded
2 peaches, pitted
1½ cups freshly squeezed orange juice
½ teaspoon freshly ground nutmeg

Using a metal spoon, scoop out the cantaloupe flesh, reserving half the flesh for another use. Set aside both cantaloupe bowls. Place the remaining
half of the cantaloupe flesh, the peaches, orange juice, and nutmeg in a blender and blend until smooth. Divide the soup between the reserved
cantaloupe bowls and serve.
