Berry Soup


Any berry will work for this recipe. Blueberries produce a thicker soup, while raspberries and strawberries create a tangier, lighter soup.


SERVES 2 TO 4

4 cups berries (such as blueberries, strawberries, or raspberries)
8 seeded, soaked dates, drained
1½ cups freshly squeezed orange juice

Place the berries and the dates in a food processor. While slowly adding the orange juice, blend until smooth. Cover and refrigerate until chilled,
about 1 hour. Pour into bowls, serve, and enjoy.
