Waldorf Salad
The Waldorf salad was a popular dish originally created for the Waldorf Hotel in New York City. This raw evolution of the traditional salad is
tastier than the original and offers a unique flavor combination.
SERVES 2 TO 4
1 small Belgian endive, separated into leaves
1 large head red leaf lettuce
¼ cup peeled, shredded jicama
3 stalks celery, diced
1 apple, cored and diced
1 cup sunflower sprouts
½ cup chopped walnuts
1 cup red or green grapes
2 cups Waldorf Salad Dressing
Arrange the five nicest endive leaves into the shape of a star around a salad bowl. By hand, tear the lettuce leaves into small pieces, then slice the
remaining endive leaves crosswise. Mix together the sliced endive leaves and the torn lettuce and add to the salad bowl.
In another bowl, combine the jicama, celery, apple, and sprouts. Place the jicama mixture on top of the greens. Sprinkle the walnuts on top of the
jicama mixture and the greens, then arrange the grapes on top to form a ring. Finish by drizzling the salad with the dressing. Serve immediately.
