Sprouted Hummus
Garbanzo beans, also known as chickpeas, sprout easily and quickly. When sprouting garbanzos, make certain not to overfill the jar. Garbanzos
expand so rapidly that they can shatter a glass jar. The best flavor comes from using garbanzos that have been sprouted for one day.
SERVES 4
4 cups sprouted garbanzo beans
¼ cup chopped fresh flat-leaf parsley
1 clove garlic
¼ cup raw tahini
¼ cup freshly squeezed lemon juice
Sun-dried sea salt
In a homogenizing juicer with the blank plate in place, homogenize the garbanzo beans, parsley, and garlic into a bowl. Place the tahini and lemon
juice in a blender and blend. Stir the lemon-tahini mixture into the bean mixture. Add sea salt to taste and serve.
