Middle Eastern Plate


This recipe uses garbanzo beans to make both the falafel-style pizza crust and the hummus spread.


SERVES 4

4 falafel crusts
2 cups Sprouted Hummus
1 tomato, diced
¼ cup minced onion, rinsed
2 tablespoons diced cucumber
2 tablespoons minced fresh curly parsley
4 sprigs mint, for garnish
4 black olives, for garnish

Place each of the falafel crusts on an individual serving plate. Spread ½ cup of the hummus on top of each crust. Sprinkle the tomato, onion,
cucumber, and parsley evenly over the top of each crust. Garnish with the mint and olives and serve.
