Sunshine
This bright orange smoothie is a delight to the eyes as well as the taste buds. For a pumpkin pie–flavored variation, add pinches of ground
cinnamon, nutmeg, and clove.
SERVES 2 TO 4
7 apples, cored, or filtered water, as needed
4 persimmons, peeled and seeded
2 bananas, peeled, frozen, and thickly sliced
If using the apples, process through a juicer into a large measuring cup (you should have about 2 cups of juice). Place the persimmons and 1 cup of
the apple juice in a blender and blend until smooth. Add the bananas and blend until smooth and creamy, adding the additional apple juice if
needed. Pour into a glass and serve.
