Thin Mint
This smoothie was inspired by everyone’s favorite Girl Scout cookie. For a different treat, you can dehydrate this smoothie into rawies.
SERVES 1 OR 2
6 dates, seeded
1½ cups filtered water
1 large sprig mint
3 tablespoons raw carob powder
1 cup Coconut Milk
4 bananas, peeled, frozen, and thickly sliced
Place the dates in a small bowl, cover with the water, and soak for about 1 hour, or until soft. Place the dates and their soaking water in a blender,
add the mint and carob powder, and blend until smooth. Blend in the coconut milk and the bananas until smooth. Pour into a tall glass and serve.
