THE NO-EXCUSES SALAD
Maybe you’ve decided that packing a salad for lunch is a healthy eating
solution. Yes—good answer! But it’s not easy to transport a bowl of greens,
veggies, and chicken without having it all become a soggy mess once you
add dressing. Enter the mason jar salad. It’s easy to fix and easy to carry,
and you don’t have to worry about any leaks or aggravations. Just construct
it according to this formula and shake it up when you’re ready to chow
down. (My 21-Day Plan Salad in a Jar will be your first of many.)
Bottom layer: Vinaigrette dressing made with olive oil (pour it in first so
the rest of the ingredients don’t get soggy)
Second layer: Crunchy vegetables
Next layer: Sturdy foods like hard-boiled eggs or chicken
Top layer: Greens (so they don’t get crushed by the weight of the other
add-ins)
Mix and match the ingredients as you like, then shake to coat with the
dressing (or empty into a bowl) when you’re ready to dive in.
