purpose flour   here
because it  has just    the
right   amount  of  gluten.
Cake    flour   does    not
contain enough  gluten
and would   result  in  a   crust
that    falls   apart   in  the oven.
Bread   flour   contains    too
much    gluten  and would
result  in  a   dough   that    is
more    akin    to  a   rubber
band    than    a   pie crust.
