vertically over the tart pan
and with the tip facing
down start piping a tight
spiral beginning from the
center all the way to the
rim. If there are spaces
between the coils or the
batter looks uneven,
smooth with a small offset
spatula. Then pipe a single
ring along the perimeter
of the pan. Use a rubber
spatula and spread the
